The recipe for making dumplings/varenyky with cottage cheese and thyme, requires;
>wheat flour for the dough – 325 grams for the filling – 50 g
>water – 150 grams
>egg for the dough – 1 / 2 pieces, for the filling – 1 piece
>salt
>cottage cheese – 900 grams
>sour cream to feed
>ground cumin – 1 pinch
First combine the flour, eggs, water and salt, then knead the dough.
Cottage cheese is mixed with egg, cumin, salt and flour.
The dough is rolled into a layer thickness of about 1.5 mm. Cut out the circles for the varenyky with a water glass or jar. Roll the stuffing into balls and place at center or the dough circles. Fold over the dough and seal the edges with a fork, then roll the edge.
Boil the varenyky in salted water for about 6-8 minutes at a moderate boil.
Drain the boiled varenyky with a slotted spoon or colander. Cover with sour cream and serve.
An optional addition is grilled onions for a topping.
